The
main function of an oenological caraf is to optimize
the taste of a young and full-bodied wine
by oxygenation.
The wine is therefore allowed to exhale its best aromas
and to develop all its marvellous features. The
pouring from the bottle to the caraf should be performed
in one shot.
The shaking of the
bottle should also be
avoided. The wide caraf neck makes the operation
easier.
The surface of
the seventy-five centiliters of wine
is spread all over the width of the body
of the caraf,
giving the
wine a maximum oxygenation.
